Unleash our entrepreneurial spirit, Chicago! We wanna be the City of Big Shoulders again! And for now, part of our future is FOOD TRUCKS! Beth Kregor, director of the Institute for Justice Clinic on Entrepreneurship at the University of Chicago Law School in Crain's Chicago Business: Five ways to give Chicagoans the food trucks they deserve

One food truck niche that has been greatly lacking has been the breakfast niche. In fact, it's nearly non-existent, largely due to regulations. That being said, the idea of a pancake truck is an idea that food truck regulars can flip for. Babycakes is introducing eaters to pancakes beyond the normal realm. Leah Wilcox, the owner of Babycakes, says that the concept is “pancakes like you have never seen them before, inspired by delicious, savory, sweet, decadent pancakes in every flavor imaginable.” Wilcox, a Kendall College Graduate and food blogger, came up with the idea while working an event when she had the idea to flavor and dye them. This month, Babycakes was born, serving up flavors way beyond your mothers kitchen: strawberry margarita, s’mores, spicy sausage and apple, bubble gum, and a variety of others. Wilcox also serves up a few more mild flavors like Maple Bacon and Red Velvet. The full menu is available on her website. To find the truck, track Babycakes on Twitter and Facebook.Babycakes Nation:)
P.S. In honor of my group's final spring concert tomorrow of golden oldies, I feel a song coming on:
Or how about this one. Breakfast music:) Time for some coffee. And where's that pan-a-cake truck.
